MIND BLOWING BEET BROWNIES
Don't let the beets in this recipe stop you from trying it. Once you taste these, you're never going to want to eat a processed brownies with fake ingredients again.
- 3 Large Raw Beets
- 3 Eggs
- ½ Cup Coconut Palm Sugar
- 2 Tsp Vanilla Extract
- ¾ Cup Raw Cacao
- 1 Tsp Gluten Free Baking Powder
- ½ Cup Almond Flour
- Preheat oven to 350F. Bring the beets to the boil in a pan for 15-20 minutes, until tender. Drain let beets cool. Peel the outer skin of the beets (don't skip the apron on this step). Chop into cubs and blend in a food processor until it becomes a paste.
- Add eggs, coconut palm sugar and vanilla extract in the blender. Add the cacao, baking powder and almond flour. Pour into 8x8in baking dishes and bake for 25 minutes. The brownies should still be slightly gooey in the middle. Allow to cool.
