(Gluten, Dairy, Artificial Sugar Free) Cinnamon Rolls

INGREDIENTS

  • 1/2 Cup Organic, Cold Pressed Coconut Oil
  • 1/2 Cup 100% Pure Maple Syrup
  • 2 Cups Pamela's Gluten Free All Purpose Flour
  • 1 Large Organic, Free Range Egg
  • 1/2 Cup Coconut Milk
  • 2 Scoops (64g) Protein Powder (I use pea protein)
  • 1 Tsp Baking Soda
  • FILLING
  • 1 Tbsp Organic Cinnamon
  • 1/4 Cup Coconut Palm Sugar
  • FROSTING
  • 1/2 Cup Organic Cold Pressed Coconut Oil
  • 1 Tbsp 100% Pure Maple Syrup
  • 1 Scoop Protein Powder (I use pea protein)

INSTRUCTIONS

  1. Using a dough hook on your mixer (you can hand mix with spatula or hands as it gets thicker if you dan't have a mixer), mix coconut oil, maple syrup, warm coconut milk and egg. Slowly add flour, protein powder and baking powder. Using the dough hook, knead dough until it forms an elastic ball (around 15 minutes).
  2. Combine the coconut sugar and cinnamon in a small bowl and set aside.
  3. Preheat oven to 370 degrees (187 C).
  4. Add flour to your hands and remove dough from the bowl.
  5. Place dough on a clean, floured surface. Use a rolling pin with a little flour on it roll out a 8 x 12 inch rectangle.
  6. Sprinkle the dough evenly with cinnamon and coconut sugar mixture.
  7. Beginning with the long side, roll the dough tightly (tucking dough as you roll). Slice the dough into 6 (2 inch) pieces. Place the rolls into an oven-safe baking dish greased with coconut oil.
  8. Bake the rolls for about 20-30 minutes (checking at 20 minutes) until golden brown. Overcooked cinnamon rolls are gross so I always take them out when they still have some gooey'ness - in my oven that's at 20 minutes. Remember that they will cook a little bit once they are removed from the oven. 
  9. Combine frosting ingredients in another small bowl, whisking . Set aside with filling bowl.
  10. Frost warm cinnamon buns and enjoy :)

Bliss Balls

Ingredients

  • 2 cups almond meal
  • 8 dates, pitted and chopped
  • 2-3 tbsp cocao powder
  • 2-3 tbsp coconut oil
  • 1 tbsp cinnamon
  • 1 tbsp local honey
  • A dash of vanilla extract
  • A dash of pink Himalayan sea salt

Optional superfood extras
  • Spirulina
  • Bee Pollen
  • Shredded coconut
  • Chia seeds
  • Goji berries

Instructions

  1. Combine dry ingredients – almond powder, cocao, cinnamon, and sea salt.
  2. Add dates, honey, coconut oil, vanilla and blend.
  3. Grab sections and roll together in your hands into small pieces.
  4. If adding extra topping, roll in superfoods.

Ingredients 

  • 2 Bananas
  • Organic Dark Chocolate (at least 70%)

Optional Topping
  • 2 Tbsp Almond Butter
  • 1 Tsp Coconut Oil
  • Drizzle of Raw Local Honey
  • Pinch of Pink Himalayan Sea Salt

Instructions

  1. Place a sheet of parchment paper onto a baking pan.
  2. Chop bananas into thick slices, place on parchment paper in put into the freezer.
  3. In the meantime melt the chocolate. Turn stove on low heat and break chocolate into smaller pieces in a small pot. (I like to stir in a tiny bit of cinnamon as the chocolate melts). Chocolate is done when the consistency is silky, make sure you take it off before it gets burnt and bubbly).
  4. Remove bananas from freezer and cover each banana piece with melted chocolate.
  5. Place bananas back in the freezer and let set for 30 mins.
  6. To make the optional topping mix almond butter, coconut oil, honey and sea salt. Drizzle on top of banana truffles.
  7. Let the recipe set overnight for best consistency.
  8. When you're ready to eat them give them 5 minutes to thaw. The middle will be the consistency of ice cream. Make these for someone you <3.

Raw Cookie Dough

  • 1/2 cup almond flour
  • ½ cup local honey
  • ½ cup almond butter
  • Dash of vanilla extract
  • Pinch of pink Himalayan sea salt
  • 70% dark chocolate chips
  • Dash of cinnamon

Instructions

  1. Mix together in a bowl and enjoy a guilt free raw cookie dough! YUM!

Banana Ice Cream

  • 1 frozen banana
  • 2 scoops of peanut butter
  • Splash of almond milk if you need it

Instructions

  1. Mix together in blender. You’ll be amazed at how close the consistency is to real ice cream. It’s so delicious and has zero guilt. It’s a not-so-naughty dessert.

The Earth Diet : 3 Ingredient Chocolate

Ingredients

  • Almond meal (you can also use almond, cashew, pumpkin, pistachio)
  • Cocao powder
  • 100% Grade A pure maple syrup ( you can also usedates, honey, grade A 100% pure maple syrup, etc)
  • Dip in Purely Elizabeth granola as a garnish!

Instructions

  1. Combine ingredients in a bowl and mix until fudge consistency. If it’s too liquidy add more almond meal, if it’s too dry try adding more maple syrup. Have fun with it and create your own add ons.

Chocolate Mousse

This is my favorite chocolate recipe for balancing hormones. Maca is a hormone balancer and cocao is high in magnesium, something you lose a lot of when that time of the month rolls around. Having enough iron and magnesium is important to having a cramp, bloat, headache and mood swing free time of the month ☺ A great recipe for women!

Ingredients

  • 1 tsp maca powder
  • 3 tbsp cocao powder
  • ½ avocado
  • 1 tsp 100% pure grade a maple syrup

Instructions

  1. Blend ingredients together into a mousse.
