MIND BLOWING BEET BROWNIES

GLUTEN, DAIRY AND ARTIFICIAL SUGAR FREE

Chocolate craving? 

Why not have a dessert that can kick the craving AND nourish your body with nutrients. Double win!

Don't let the beets in this recipe stop you from trying it. Once you taste these, you're never going to want to eat a processed brownies with fake ingredients again. 

INGREDIENTS
  • 3 Large Raw Beets
  • 3 Eggs
  • ½ Cup Coconut Palm Sugar
  • 2 Tsp Vanilla Extract
  • ¾ Cup Raw Cacao
  • 1 Tsp Gluten Free Baking Powder
  • ½ Cup Almond Flour
DIRECTIONS
  1. Preheat oven to 350F. Bring the beets to the boil in a pan for 15-20 minutes, until tender. Drain let beets cool. Peel the outer skin of the beets (don't skip the apron on this step). Chop into cubs and blend in a food processor until it becomes a paste. 
  2. Add eggs, coconut palm sugar and vanilla extract in the blender. Add the cacao, baking powder and almond flour. Pour into 8x8in baking dishes and bake for 25 minutes. The brownies should still be slightly gooey in the middle. Allow to cool.

from the Bikini Abs Holiday Edition


Happy Tuesday beautiful!

I know how hard it can be to stay on track during the Holidays. One of the most frequently asked questions I get this time of year is "how do I stay on track when there is tempting food everywhere?".

There are so many options! We discuss all of them in the 8 Week Bikini Abs Holiday Edition program. But I won't leave you hanging here. One tip to get you started right now is to have healthy substitutes. The 8WBA Holiday Edition comes with a Healthy Holiday Cookbook packed with recipe substitutes that taste great. One of our favorites for anyone with a sweet tooth is these Pumpkin Truffles! They are gluten, grain, artificial sugar and dairy free! On top of that we believe that everything you eat should make you better so the sweetener we use actually has nutrients in it. Yessssss! We all win!

Take these to your next Holiday party or keep them stocked in the freezer for sugar cravings. They are crazy simple to make!

PUMPKIN TRUFFLES
HIGH NUTRIENT + GLUTEN, GRAIN, DAIRY & ARTIFICIAL SUGAR FREE
PREP TIME
15 Minutes Prep
SERVES

INGREDIENTS
FILLING
  • 1 Can Organic Pumpkin
  • ½ Cup Almond Butter
  • 3 Tbsp 100% Pure Maple Syrup
  • 1 1/2 Tsp Cinnamon
  • 1/4 Tsp Nutmeg
COATING
  • 1 ½ Cups High Quality Chocolate Chips (at least 70% cocao)
  • ¼ Cup Coconut Milk

DIRECTIONS
  1. In a high powered blender or food processor, combine all the ingredients for the pumpkin filling. Blend until smooth.
  2. Stick the food processor bowl in the fridge to firm up a little. About 10 minutes.
  3. Using a cookie scoop, drop mixture onto a lined baking sheet.
  4. Place baking sheet in the freezer to firm while you make the chocolate mixture.
  5. To make the chocolate use a double boiler method. Fill a saucepan with water and bring it to a boil.
  6. Place a smaller pot on top of the pot with the water. Add the chocolate chips and coconut milk to the small pot and gently melt the chocolate.
  7. Once the chocolate is melted, use a spoon to drizzle the chocolate over each truffle.
  8. Place in the fridge to firm up the chocolate.
  9. Keep these truffles in the refrigerator. You can freeze them for longer storage. Enjoy!

PUMPKIN PIE CUPCAKES
HIGH NUTRIENT + GLUTEN, GRAIN, DAIRY & ARTIFICIAL SUGAR FREE

INGREDIENTS
CUPCAKE INGREDIENTS
  • 1 Can Organic Pumpkin
  • 2 Very Ripe Bananas
  • 1/2 Cup Coconut Palm Sugar
  • 1 1/2 Tsp Cinnamon
  • 1/4 Tsp Ginger
  • 1/4 Tsp Nutmeg
  • 1/4 Tsp Pink Himalayan Sea Salt
WHIPPED COCONUT CREAM
  • 1 Can Full Fat Coconut Milk (Refrigerate Overnight)
  • 2 Tbsp 100% Pure Maple Syrup
  • 1 Tsp Vanilla Beans

DIRECTIONS
  1. Preheat oven to 350 degrees F.
  2. In a food processor or high powered blender, combine all the cupcake ingredients and blend until smooth. You may need to scrape down the sides a few times.
  3. Spoon the mixture into lined muffin pans. Bake for 30-35 minutes.
  4. Let cupcakes cool completely before removing from the muffin liners. Since they are soft like pumpkin pie, I highly recommend putting them into the fridge after baking to firm up.
  5. To make the coconut whipped cream, open coconut milk that has been refrigerated overnight. Scoop the fatty white part off and place in a mixing bowl with the vanilla and maple syrup. Use the whipping attachment and whip the coconut into a cream. Top each muffin with coconut whipped cream. Store in the refrigerator.
