PUMPKIN CHEESECAKE MOUSSE

Today is Recipe Tuesday here at StephHendel.com and I’m bustin’ out a personal Fall favorite. We’re talkin’ pumpkin, vanilla, cinnamon…some of the BEST things about Fall, all rolled up into one delicious and health coach approved dessert!
PUMPKIN CHEESECAKE MOUSSE
Ingredients
- 1 Cup Pre-Soaked Organic Cashews (overnight will give you the creamiest consistency)
- 1/2 Cup Organic Pumpkin Puree (check the back and make sure it only has 1 ingredient – pumpkin)
- 1/2 Cup Organic Coconut Milk
- 2 Tbsp Coconut Oil
- 2 Tbsp 100% Pure Maple Syrup
- 1/2 Tsp Lemon Juice
- 1/2 Vanilla Pod (just the beans) or 1 tsp vanilla extract
- 1 tsp Cinnamon
- 1 tsp Pumpkin Pie Spice
Directions
1. Blend all ingredients together in food processor or Vitamix.
2. Garnish with Cocao nibs and cinnamon!
* If you want to get REEEAL fancy like I did, you can layer Cocao powder between the cheesecake mousse
